Vegan Mayonnaise
1 12-oz package silken or soft tofu
1 tsp mustard
2 tbsp cider vinegar
1 tbsp organic sugar
1/2 tsp onion powder
1/2 tsp salt
In a blender or food processor, blend all the ingredients. Makes approx. 1 1/2 cups.
