Creamy Banana Pudding

1 cup soft tofu
2 bananas, chopped
3 tbsp dates, chopped (optional)
2 1/2 tbsp oil
1/4 cup organic sugar
1 tsp lemon juice
dash of salt
1/2 tsp vanilla extract

In a blender or food processor, blend together all the ingredients until smooth and creamy. Chill well before serving. Makes 2-4 servings.
