Pumpkin Smoothies!!!

Pumpkin Smoothie (makes 3-4 smoothies)
Recipe by Erica

2 cups vanilla coconut milk (I use the So Delicious brand)
3 dates, pitted
2 frozen bananas (you can use one banana and add ice if you like to get it to the right consistency)
1/2 cup organic pumpkin (I used the Farmers Market brand today but I have pureed pumpkin in the freezer that I will use too)
dash of cinnamon (it was probably about 1/4 tsp)
dash of nutmeg (about 1/8 tsp)

Delicious Brussels Sprouts

I found these great brussels sprouts yesterday at a health food store near my daughter's home.


Wash them in cool water and take off the very outer leaves.


Parboil them for 5 minutes or so, then plunge them into cold water. This helps them to retain their green coloring. Then I cooked them over medium heat in a large skillet with sesame oil, organic tamari, pepper, and parsley flakes. You be the judge on how much of each you add, I usually just keep tasting.


The pasta on the side is penne with olive oil, Daiya vegan cheese, and garlic.

Homemade Donuts

2 cups flour
1/2 cup sugar
1 t. salt
1 T. baking powder
1/4 t. cinnamon
2 T. vegan butter
1/2 c. soy/almond/or rice milk
1 egg or equivalent of egg substitute

Combine flour, sugar, salt, baking powder and cinnamon in a mixing bowl. Add butter
and beat until combined. Add milk and egg substitute.




Heat 1-2 inches oil in large skillet over medium heat. Roll dough out on a floured surface. Roll 1/2 to 1 inch thick. Use biscuit cutters or the top of a glass to cut donut shapes cut center out too and also fry the donut holes.
Fry donuts for 3 minutes per side or until golden brown. Drain on paper towels.



We kept our plain today with just a sprinkle of powdered sugar. You could frost them with plain or chocolate icing, etc.

Homemade Poptarts


These were quick and easy!
Ingredients:
3 1/2 cups whole wheat flour
1 teaspoon sea salt
1 cup melted butter
1 cup plain yogurt
Your favorite flavor of organic jam/jelly


Mix ingredients just until dough is workable. Roll out floured surface to desired thickness.

Cut into any size or shape you want. I did the usual squares and used a veggie slicer to make the edges pretty. You can also press a fork all along the edges to seal together. Put a dollop of jelly in the center of your poptart then cover with a piece of dough that is a similar size. Press edges together. I sprinkled a little sugar on top but you could also cover these with icing when they have cooled.

Bake at 350 degrees for 25 - 35 minutes. Let cool on cooling rack.


Enjoy with a tall glass of cold almond milk.

UPDATE... Decided to glaze them. Hubby has a very sweet tooth.
